Smoked Maple glazed Carrots
Serves: 4 Prep time: 10 min Cook time: 30 min Total time: 40 min
1 lb. carrots ( I added parsnips, optional)
2 tbsp. Olive oil
1 tsp kosher salt
1 tsp black pepper
3 tbsp Smoked Maple Syrup (separated)
Preheat oven to 400° if you have convection use it, you will get better caramelization)
Peel the carrots and slice lengthwise into quarters.
Place on a foil covered baking sheet, drizzle olive oil and sprinkle with salt and pepper. Toss to coat.
Roast until nearly done, drizzle on half the maple syrup and stir to coat all the carrots.
Remove from oven when done to your liking and place in serving dish, drizzle on remaining smoked maple syrup.
