Sauteed Branzino with Smokey Tomato Relish

Serves: 4        Prep time:  15 min          Cook time: 10  min          Total time:  25 min

Ingredients:

1 lb. Branzino fillets (or other mild white fish)

¼ cup flour

½ tsp garlic powder

½ tsp kosher salt

1 tsp pepper

2 tbsp olive oil

 

For Smokey Tomato Relish:

 

2 lg ripe tomatoes, diced

1 clove fresh garlic, minced

4-5 fresh basil leaves, torn

1 tbsp Smoked olive oil

Salt and pepper to taste

 

Instructions:

In a small bowl, combine all relish ingredients and set aside

Combine flour and seasonings in a shallow dish

Heat a large skillet and once hot add olive oil.

Coat fish with flour mixture shaking off excess

Sauté fish until just cooked through and lightly browned.

Place fish on serving dish and spoon relish over.
