Mushroom Crostini with Smoked Olive Oil

Serves: 4        Prep time: 15 min           Cook time: 15 min           Total time: 30 min


4 slices bacon cut into small dice, or ¼ cup pancetta diced small

1 lb. mixed mushrooms, cleaned and sliced

8 slices French baguette

2 tbsp extra virgin olive oil

1 clove garlic, minced

1 tbsp parsley chopped fine

2 tsp Smoked Olive oil

Salt and pepper




Heat your skillet on medium heat and cook bacon until crispy, remove from the pan and set aside.

Heat olive oil until it shimmers, add the mushrooms, and cook without stirring until they any juices have evaporated, and they start to brown. Add the garlic, parsley and season with salt and pepper. Stir and cook until the pan is dry, and the mushrooms are golden brown.

Toast baguette slices, mix bacon and mushroom mixture and top each slice. Drizzle Smoked Olive oil over each Crostini.
