Caribbean Island Spice Grilled Potatoes
4 Russet Potatoes
2 tbsp. olive oil
3 tbsp. Sleepy Hollow Smoke Caribbean Island Spice
Place the potatoes in a microwave and heat for approximately 4 minutes just until they give slightly when squeezed. Wrap them in a dish towel and let them rest for 5 minutes. This will allow them to cool and finish cooking to a partial doneness. After resting, cut the potatoes into thick wedges, brush with olive oil and sprinkle the Caribbean Island spice over them lightly and evenly.
If grilling, put the potatoes on for about 3 minutes, longer if your grill marks don’t appear, and cook for grill marks. Remove from the grill to a platter and serve right away.
If using the oven, place the potatoes on the aluminum lined cooking sheet and place back in the 400 degrees F oven for 4 minutes turning after 2 minutes or until desired crispy doneness.
