Roasted Brussel Sprouts with Smoked Olive Oil and Lemon Aioli

Serves: 4        Prep time: 20 min           Cook time: 30 min           Total time: 50 min

Preheat oven to 400 °


1 lb. brussels sprouts, stem end trimmed and sliced in half.

2 tbsp. Olive Oil.

½ teaspoon kosher salt

¼ teaspoon pepper

2 tbsp. Smoked Olive Oil

For the Aioli:

1/3 cup good quality mayonnaise

Zest and juice of ½ lemon


Place trimmed brussels sprouts on foil lined baking sheet, drizzle with olive oil and sprinkle on salt and pepper.

Roast brussels sprouts (use convection if you have it) about 30 min or until just tender and some of the outer leaves are crisp.

Transfer to a serving dish and drizzle on the Smoked Olive Oil.

Mix the Mayonnaise with the lemon zest and juice, drizzle some over and serve the rest on the side.
